Rubusoside is a sweetener that is scarce in nature. In this experiment, a β - glucosidase from Aspergillus niger was screened out from various glycosidases to specifically hydrolyze stevioside for high - throughput preparation of rubusoside. After reacting for 12 h under the optimal conditions, the yield of rubusoside was 90.4% and the conversion rate of stevioside reached 98.8%. In order to further investigate the safety of rubusoside and expand its potential uses, the cytotoxicity of rubusoside on human gastrointestinal and liver cells was examined in the experiment, that is, the inhibitory effect of rubusoside on the growth of 3 normal cells and 11 cancer cells. The experimental results showed that at a mass concentration of 250 µg/mL, rubusoside was non - toxic to normal human gastrointestinal and liver cells; at the same mass concentration, the inhibition rate of rubusoside on human liver cancer cells BEL - 7404 was 30% of that of 5 - fluorouracil.
