In order to simultaneously increase the yields of proanthocyanidins and anthocyanins in black peanut skins, single-factor experiments and response surface analysis experiments were used to optimize the extraction process of proanthocyanidins and anthocyanins in black peanut skins. Based on the single-factor experiments, with the pH value fixed at 3 and the extraction time at 120 min, the liquid-to-solid ratio, ethanol volume fraction, and extraction temperature were selected to design response surface experiments to investigate the effects of each independent variable and its interaction on the yields of proanthocyanidins and anthocyanins. The optimal extraction parameters obtained were: a liquid-to-solid ratio of 52∶1 (mL∶g), an ethanol volume fraction of 48%, and an extraction temperature of 44 °C. Under these conditions, the extraction rates of proanthocyanidins and anthocyanins in black peanut skins were 13.769 mg/100 mg and 0.660 mg/100 mg, respectively.
